Evaluation of Fruit Quality and the Anatomical Characteristics of Gaeryangmeoru (Vitis sp.) Grapes Depending on the Growth Stage

Abstract

The aim of this study was to identify the chronological growth characteristics of Gaeryangmeoru grapes, by observation of the developmental process of the axillary bud, fruit quality, and anatomical structure of the pericarp. No necrosis of axillary buds was observed, irrespective of node position of the shoot, from shoot occurrence to leaf fall. Berry weight, cluster weight, soluble solid content and titratable acidity were analyzed to be 1.2 g, 128.8 g, 16.9 °Brix, and 1.57%, respectively, at maturity. The sugar was composed of fructose and glucose, with a ratio of 1:1 (fructose: glucose) at maturity. Malic acid was predominant among the organic acids, and conformed to the changes of chronological titratable acidity. Sugar and organic acid content changed dramatically starting a week before veraison. The degraded ovules were observed before and after fertilization, and the pericarp was composed of one epidermis, and seven to ten hypodermis layers at maturity.

개량머루의 시기별 생육 특성을 구명하기 위하여 액아 발달, 과실 품질, 과실 조직의 해부학적 발달과정을 관 찰하였다. 액아는 신초 발생부터 낙엽기까지 가지에서 마디 위치에 관계없이 괴사가 전혀 발생하지 않아 모두 충실하였다. 성숙기 과실 특성은 과립중 1.2g, 과립수 98 개 및 과방중 128.8g이었고, 당도 16.9°Brix, 적정산도 1.57%이었다. 당의 조성은 과당과 포도당이었고 성숙기 의 과당과 포도당의 비는 1:1에 도달하였다. 사과산이 유 기산 중에서 가장 많았으며 시기별 적정 산도의 변화가 일치하였다. 당과 산은 변색 1주전부터 급격하게 변화하 였다. 배주의 퇴화는 수정 전후에 모두 발견되었고 성숙 기의 과피는 1층의 epidermis와 7~10층의 hypodermis로 구성되었다.
